💚 從澳洲來的居家隔離烹飪 〜 椒鹽豆腐
Quarantine Cooking from Perth, Australia 〜 Salt and Pepper Tofu ☘️

昨天早上,我收到了 Emily 的來訊,Emily 是一位了不起的年輕女孩,從她十多歲我便認識她,已很多年了。她目前與男友 Connor 一起在 Australia,但大部分時間都在室內渡過,就像我們在英國一樣。她說:「 嗨,Jane,我希望你不要介意我問,我想做妳那個豆腐食譜,但現在這裡的任何商店都找不到麵粉!我有玉米粉,你認為那行得通嗎?如果不行的話,我便等找到才做吧! 」

我對她說:「 妳可以使用玉米粉,只是做出來的外層比較柔軟和帶點粘性。我的那個配方,使外層煎起來較牢固,更脆,但妳是絶對可以使用玉米粉的,只需在煎豆腐時將它們排開一點,以免粘在一起。 」

Emily 在傍晚時回答我,說:「 真是太好的食譜了,謝謝你 Jane!Connor 很期待下班回來大快朵頤呢!xx 」

Yesterday morning, I had a message from Emily, an amazing young lady who I have known for many years since she was a teenager. She is currently in Australia with her boyfriend Connor, but spending most of her time indoors just as we all are in the UK. She said, “Hi Jane, I hope you don’t mind me asking. I want to make the tofu recipe but I can’t find flour in any shops here at the moment! I have cornflour though, do you think that would work? If not, I’ll wait until I can find some! ”

I replied to her, “You can use cornflour, it will just have a softer coating and may be a little stickier. I developed this recipe so the coating is firmer and crispier, but you can certainly use cornflour, just keep the pieces apart when pan-frying the tofu to avoid them sticking together”

Emily replied to me in the early evening to say, “ Fantastic recipe, thank you Jane! Connor is looking forward to coming home from work to this xx ”
